Cajun Shrimp Tacos with homemade Hard Taco Shell’s






I made these tonight and WOW are they good! It was so hard to stop eating these, there is so much flavor! I sprinkled a little fresh cilantro on the tops of my taco along with the avocado and cheese but everything else I did exactly as directed, and my wife and I couldn’t get enough of it!

Skinny Cauliflower Tots




These cauliflower tots have half as many carbs, one-third less fat, and are higher in protein. It’s a delicious way to sneak some vegetables into your diet!


Made these tonight and they were great! I didn’t have bread crumbs so I just used saltine crackers(maybe not the best choice, but it’s all I had on hand!) They were a hit, and we’ll definitely be making them again! *Regarding the mess it makes when chopping the cauliflower, try using a cheese grater placed inside a large bowl or baking dish.

Buttermilk Strawberry Bundt Cake with Sweet White Chocolate Strawberry Ganache

Ingredients:

For the cake:
  • 1 stick unsalted, softened butter
  • 1/2 cup canola oil
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 3/4 cup sour cream
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1/4 cup strawberry jam
  • 3 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2-3 drops red food coloring

For the ganache:
  • 14 ounce can sweetened condensed milk
  • 2 tablespoons strawberry jam
  • 1/2 cup white chocolate chips
  • 1-2 drops red food coloring

Directions:

Preheat oven to 350 degrees F. and spray a bundt cake pan generously with cooking spray.

In a stand mixer, beat the butter, oil, sugar, eggs, sour cream, jam and vanilla until combined. Place flour, baking soda, baking powder and salt into a large bowl, mixing to combine. Alternate adding flour then buttermilk until well combined. Stir in red food coloring to enhance pink color. Transfer batter to prepared bunt pan spreading cake evenly. Bake for 50-55 minutes until baked through. Remove and let cool completely.

Just before serving prepare ganache. Heat sweetened condensed milk in a small saucepan over medium-low heat, stirring. Add jam and white chips stirring until melted. Once melted, stir in 1-2 drops of red food coloring to enhance color if desired then turn off heat. Let cool/thicken for about 5 minutes. With a spoon, drizzle icing over cake letting drip down sides as desired. Serve room temperature.

Cranberry Cream Cheese Dip





I just made this last night and I doubled the cumin because I couldn’t taste it at all at 1/4 tsp and I cut the sugar down to 1 cup. My nephew and I just taste tested it and it hasn’t set the 4 hours for the flavors to meld like the recipe says and we are already hooked! I can’t wait to see how it tastes tomorrow. I’m sure this will be a big hit. We tried it on mini tortilla chip rounds and on the originial Wheat Thins and I like it both ways.

Just a little tip on handling the jalapeno. I do this all the time and I never get burns from the seeds. I cut the stem end off and make sure to only touch the outside area down near the other end. Use the knife to cut around the inside between the membrane/seeds and the outer layer, separating the membrane from it. Now, holding the jalapeno carefully, slice the jalapeno down the middle longways, cutting it in half. Use the tip of the knife to scrape out the membrane and seeds and then put it in a mini chopper or chop by hand.

7UP Biscuits




These looked so good and looked easy enough – only 4 ingredients!

I tried them tonight. Very light and fluffy! I found the dough to be super sticky. I didn't pack the bisquick tight, so maybe that would help. So I just plopped the whole thing in the pan over the butter. Oh-the buttery, crispy goodness!

Sketch-Free Broccoli and Cheese Soup





This is about the third or fourth time I've made this soup and I just wanted to tell how much I love it! My wife asks for it all the time too :) I love how easy it is...perfect for mid-week when I just want to whip up something yummy fast. Also for nights when I'm feeling sick like tonight! It's awesome to have a go-to recipe for something tasty that hardly requires any effort. So this 3rd time I just added about 2 1/4 - 1/2 cups TOTAL of cheese ~ I just used leftovers. Hmmm and only added broccoli, broccoli stems, and lots of carrot. Oh! I used 4 TB butter/flour because I was using half and half. Hehe, I ate 3 bowls ;)

Seems like a versatile soup base if you want a potato cheese soup, or a cauliflower cheese soup, which is cool.

The ground nutmeg adds a nice flavor :) ...although the flavor almost disappears after the next day, but, oh well!
